hot plate with stainless steel?

Hello, I just bought a cookware stainless steel. And I'm always setting myself I'm used to nonstick cookware. Everytime I cook, he still roasting on the hearth. When I enter my steak, instead of brown bits, it burns instead. I'm consufed now, I already use oil and wait until the pan is hot. Do you think I should not put the pan under high heat? Couple of factors here, first, stainless steel is a poor conductor of heat and most is "Encapsulated" This which means that the bottom has a copper disk and aluminum, but generally sandwiched between steel. This is done so that the heat is evenly distributed, or more evenly if it is just steel. But I'm willing to bet that your cookware is encapsulated or sandwiched leading to the cooking fat. Use an oil that has a high smoke point like canola oil or peanut oil. You can use olive oil if called pomace olive oil or pure, never cook with extra virgin olive oil, pure or pomace has a higher point of the smoke ... (This is a volume in itself.) Third and fourth ... heat could be put in high and cold steak, in other terms let your steak sit out for about half an hour before cooking. Which brings us to how you like your steak? If you eat your steak well done, you probably burn the pot because of the time it takes to cook a good dish, the bottom at the bottom of the pan will burn at high heat.
